Ideal water temperature between 92° and 96° for a better extraction of the coffee aromas. The new outlet arm with its 9 raised holes ensures a better distribution of water on the grind. 
 
Precision
The Select offers a perfect extraction time of 5.5 minutes. The extraction time should be at least 4 minutes for a perfect deployment of the coffee's aromas and flavors but less than 8 minutes otherwise the coffee would be bitter. With Moccamaster, your coffee will reveal its deepest flavors. 
 
Temperature
The hot plate adjusts its temperature to the amount of coffee in the jug to avoid burning the coffee. 
 
Positioning
The Select is the luxury version of the iconic Moccamaster.
